HELLO. I have great news. A few weeks ago, in the depths of my house, I found a magnificent waffle maker that nobody knew we had. I’m not kidding when I say I’ve made waffles at least once a week since this discovery. Please indulge in these Almond Flour Waffles because they’re amazing.
To continue my Grain Free Waffle endeavors, I purchased this waffle maker for my college apartment. I could not resist purchasing it based on the amazing reviews and the incredible price. Plus waffles are a fan favorite and I knew I’d be making them every weekend.
How do you know this recipe is good? It has the stamp of approval from my boyfriend. This is huge because he is so anti-gluten free (or at least was) because he can “taste the lack of gluten”. WOW how his perspectives have changed.
These waffles are perfect because they don’t leave you uncomfortably stuffed; I always feel like regular waffles sit in my stomach after I eat, whereas with these I feel like I can continue my day freely after indulging.
Pro Tip: slice up some peaches or strawberries or throw a few blueberries on top for extra taste. I love these waffles alone but a sweet peach really adds a nice flavor to them.
Drizzle with maple syrup, invite the neighbors over, & enjoy!
- 1 cup almond flour
- 1 teaspoon baking soda
- ½ teaspoon cinnamon
- 4 eggs
- ¼ cup honey
- 1 teaspoon vanilla extract
- 1 peach (for toppings)*
- Mix almond flour, baking soda, and cinnamon together in a large bowl.
- Mix the eggs, honey, and vanilla together in a medium bowl. Add to the dry ingredients, and mix well.
- Spray waffle maker with non-stick spray.
- Heat waffle maker.
- Using a ladle, drop better onto the iron.
- Cook until browned. Top with maple syrup and peaches.
Serving size depends on your waffle maker.
